Day 1 Mission Trip to Guatemala - Pearson International Airport

A team of 16 from Broadway Tabernacle Church, including myself, were going on a mission's trip to Guatemela. We booked into the Comfort Inn ($130.00 per night and we can leave our car for the week)just five minutes from the airport. The group met in the lobby of the hotel at 9:00 p.m. with 2 bags of luggage each and weighing in at about 50 pounds each. We were all excited and everyone had smiles on their faces. We were weighing our luggage and moving items from one bag to another to keep the required weight allowance. We all got our keys to our rooms and we all went our seperate ways. The rooms were warm and cozy, clean and the double beds were comfortable and very clean. It was about 11:00 by the time we got to bed. After laying there with my eyes open until 1:00 a.m. I finally drifted off to sleep. The wake up call came just over an hour later. The day is now beginning. We are all tired and it's now the wee hours of the morning.

Our flight was supposed to leave this morning at 6:00 a.m. but when we got to the airport at 3:00 a.m. the flight schedule said our flight was canceled to Atlanta. The southeast United States was having a fluke snowstorm. Mississippi, Florida, Texas, Atlanta and some other States were caught in this unusual snow storm. It has crippled these States for the last couple of days. Two guys from our team took the responsibility of making arrangements to get other flights for 16 people to Guatemala. After a grueling 7 or more hours of dealing with the supervisor of Delta Airlines flights were booked and seats were arranged.

It was now 3:00 p.m. in the afternoon and we had to gather our luggage and head back to the hotel to get our vehicles. A few people stayed at the hotel for another night and others drove the 40 minute drive back to our homes in Orangeville. Me being one of them. I finally made it home and had a warm bath and jumped into bed.

Looking forward to getting on the Air Canada flight to Houston tomorrow and then catch a connecting flight with Continental Airlines to Guatemala.

A delicious Pampered Chef recipe

Jerk Chicken Nachos

Ingredients:
6 cups (1.5 L) tortilla chips
3 cups (750 mL) diced or shredded cooked chicken
8 oz (250 g) shredded marble cheese (2 cups/500 mL)
2 tbsp (30 mL) Jamaican Jerk Rub, divided
1 small yellow or red bell pepper or combination
1 lime
2 tbsp (30 mL) snipped fresh cilantro
1/4 cup (50 mL) sour cream and 1 tsp (5 mL) additional Jamaican Jerk Rub (optional)

Directions:
1. Preheat oven to 425°F (220°C). Arrange tortilla chips in a slightly overlapping layer on Large Round Stone with Handles.

2. In Classic Batter Bowl, combine chicken, cheese and 1 tbsp (15 mL) of the rub; mix gently using Small Mix 'N Scraper(R). Sprinkle chicken mixture evenly over tortilla chips. Bake 5-7 minutes or until cheese is melted; remove from oven to Stackable Cooling Rack.

3. Meanwhile, dice bell pepper with Santoku Knife. Cut lime in half crosswise. Juice half of the lime using Citrus Press into Small Batter Bowl; add bell pepper and remaining rub and mix well.

4. Snip cilantro in mincing cup of Herb Keeper using Kitchen Shears. Slice remaining lime half using Ultimate Mandoline fitted with v-shaped blade; cut slices in half using Utility Knife.

5. Spoon bell pepper mixture over nachos; sprinkle evenly with cilantro. If desired, combine sour cream and additional rub in resealable plastic bag; trim corner to allow sour cream to flow through. Pipe sour cream mixture over nachos. Garnish with lime slices.

Yield: 12 servings

Per serving: Calories 180, Total Fat 7 g, Saturated Fat 4.5 g, Cholesterol 45 mg, Carbohydrate 12 g, Protein 16 g, Sodium 320 mg, Fiber 1 g

Cook's Tip: Use the Classic Batter Bowl to measure tortilla chips easily. Discard broken chips.

Kids will always need their parents no matter how old they are

I went to visit my Mom yesterday and I came home with my Grandson, Jack. My son-in-law had a couple of job interviews today and my daughter as well. I'm not exactly sure how they went but I don't ask a lot of questions. I sure don't want to be the nosey mother/mother-in-law. Patiently, I will wait to hear the outcome. My business was crazy, busy today and I was babysitting at the same time. The two don't work too well together but then again these are the benefits of working out of my home. My daughter called today and asked if I would keep Jack another night so she can go out with her girlfriends. On top of that she says she isn't feeling too well. She really knows how to get to me. So, of course I said, "yes"! I do what I can to help my kids. My son Mark called yesterday debating whether or not he should come home from Edmonton. Then he asked me the question. "Mom, what do you think"? "Should I come home or should I stay"? He's leaving for Afghanistan next weekend. Problem is he needs someone to pay for his ticket home. He still hasn't paid us for his last ticket home. Well, as we speak he is on a plane right now flying home. So, that takes me to the end of this blog. I will be on my way to the airport to pick up my son in less than two hours from now.
